This study aimed to monitor the evolution of lactic acid bacteria in raw milk stored under refrigeration at 4°C for 10 days by comparing a control sample with a sample supplemented with 25% aqueous oregano extract. The results showed that lactic acid bacteria grew in both samples throughout the storage period; however, their growth rate was slower in the oregano-treated milk, particularly during the first days of storage. The generation time was longer in the treated sample (3.5 days) than in the control sample (2.98 days), indicating an inhibitory effect of the bioactive compounds present in oregano. Nevertheless, both samples reached a similar bacterial population by the end of the storage period. These findings suggest that combining refrigeration with the addition of aqueous oregano extract may temporarily slow the growth of lactic acid bacteria, thereby contributing to the preservation of the microbiological quality of raw milk during storageen_US
